Crispy Avocado & Bean Taquitos with Vegan Cilantro Ranch

Ingredients


For the Taquitos

  • 2 large ripe avocados

  • Sea salt & black pepper, to taste

  • 1–2 cans (15 oz each) vegan refried beans

  • ½–2 tbsp taco seasoning, to taste

  • Corn tortillas

  • Olive oil, for brushing

  • Hot sauce, optional

  • Shredded lettuce

  • Fresh cilantro, chopped

  • Salsa of choice


For the Pico de Gallo

  • 2 Roma tomatoes, finely diced

  • ¼ cup red onion, finely diced

  • 1 small jalapeño, seeded and minced (optional)

  • ¼ cup fresh cilantro, chopped

  • 1 tbsp lime juice

  • Salt, to taste


For the Vegan Cilantro Ranch

  • ½ cup vegan mayo

  • ¼ cup unsweetened plant-based milk (oat, soy, or almond)

  • 1 clove garlic

  • ½ cup fresh cilantro, packed

  • 1 tbsp lime juice (or lemon juice)

  • ½ tsp onion powder

  • ½ tsp garlic powder

  • ¼ tsp sea salt

  • ¼ tsp black pepper


Directions


1. Make the Pico de Gallo

In a small bowl, combine tomatoes, red onion, jalapeño, cilantro, lime juice, and salt. Stir well and set aside to marinate while you prepare the taquitos.


2. Make the Avocado Mash

Cut the avocados in half, remove the pits, and scoop into a bowl. Season with salt and pepper, then mash until mostly smooth. Set aside.


3. Season the Beans

Combine refried beans and taco seasoning in a bowl. Mix well and adjust seasoning to taste.


4. Warm the Tortillas

Heat tortillas over a gas flame, in a skillet, or in the microwave until warm and pliable. Keep wrapped in a kitchen towel to prevent drying.


5. Assemble the Taquitos

  • Brush ONE side of each tortilla lightly with olive oil.

  • Flip it over and spread a layer of avocado mash down the center.

  • Add a generous spoonful of seasoned beans and a drizzle of hot sauce.

  • Roll tightly and place seam-side down (oiled side on the outside).


6. Air-Fry Until Crispy

Place rolled taquitos seam-side down in the air fryer.Cook at 380°F for 10 minutes, flipping halfway through, until golden and crisp.


7. Make the Vegan Cilantro Ranch

Blend all ranch ingredients until smooth and creamy. Adjust seasoning as needed.


8. Serve & Enjoy

Plate the crispy taquitos and serve with:

  • Fresh pico de gallo (on top or on the side)

  • Shredded lettuce

  • Cilantro

  • Salsa

  • Plenty of vegan cilantro ranch for dipping
