Ingredients
5 ounces shiitake mushrooms
1 tbsp pinto noir
1 tsp lemon juice
1 ciabatta roll
1 clove garlic
4 tbsp olive oil
Salt
Fresh herbs (optional)
Directions:
Prep
Wash, dry, and coarsely chop mushrooms.
Mince 1 clove of garlic.
Slice 4 pieces of ciabatta bread (about 3/4 inch wide).
Mince 1 sprig of rosemary and thyme. (optional)
Cooking
In a medium sized pan, heat 1-2 tbsp olive oil. Once oil is hot, add in chopped mushrooms and sprinkle with 1 tsp of salt. ( Do not stir mushrooms)
Turn heat down to medium-low and let mushrooms cook for about 4 minutes. Then add in wine and lemon.
Reduce heat to medium-low and let mushrooms sit in marinade until they become a golden brown color (about 3-4 minutes). Making sure to stir frequently.
In a separate pan, add 1-2 tbsp olive oil and minced garlic. Once oil is hot, turn to medium-low heat and add in ciabatta bread. Toasting 1-2 pieces in the garlic oil at a time. Toast each slice on both sides until it turns golden brown on the edges.
Place toast on a serving plate and top with sautéed mushroom. Options here to garnish with minced rosemary and thyme.
Serve and enjoy.
