Fresh Pasta Arrabiata

Ingredients
Pasta Dough
● 1 1⁄4 cup (150 g) all-purpose or artisan flour
● 1 cup (150 g) semolina flour
● 1⁄2 tsp salt
● 3⁄4 cup (150 ml) water
● 2 tsp olive oil
Arrabiata Sauce
● 1⁄2 cup olive oil
● 8 cloves garlic, minced
● 2 tsp red pepper flakes
● 4 tbsp tomato paste
● 4 cups crushed tomatoes
● 4 tsp sugar
● 2 tsp salt
Garnish
● Olive Oil
● Fresh basil or parsley
● Cracked black pepper & salt
Instructions
Homemade Pasta dough
1. Mix the flour, semolina and salt in a bowl. Create a well. Pour in water and olive oil, mix together until well combined.
2. Transfer to a working surface and knead to a smooth and soft dough, about 8-10 minutes. (Add more flour if the dough is too wet, add more water, if too dry). 3. Form to a ball, wrap in cling foil and let chill in the fridge for 30 minutes.
Pasta Machine
1. After the dough has been refrigerated, cut into 2 equal portions.
2. Place 1 portion on a floured working surface and thinly roll out using a rolling pin so that it will be able to move through the pasta machine.
3. Dust dough with more flour and prepare to move through the machine starting at level 0. While moving dough through the machine, make sure to not let the dough double up on itself.
4. After desired thickness is reached, dust dough with more flour and run through desired pasta cut. Again, making sure to not let the dough double up on itself.
5. Place cut pasta onto a floured surface. Make sure to place each piece separate from one another to prevent sticking.
6. Continue the same process with the next dough portions.
7. To cook, bring a large pot of salted water to a boil. Add pasta and cook until tender, about 5-6 minutes.
Sauce Instructions
Sauté the garlic and red pepper flakes. Heat the olive oil in a large skillet over medium heat. Once warm, add the garlic and red pepper flakes. Sauté for 1-2 minutes, or until the minced garlic cloves begin to slightly brown.
Caramelize the tomato paste. Add the tomato paste and sauté for another 2 minutes, until the tomato paste darkens in color.
Add in the crushed tomatoes, sugar, and sea salt. Stir together and bring the mixture to a simmer. Simmer on low heat for 15 minutes, stirring occasionally.
Assembly Instructions
1. Toss fresh pasta with olive oil and plate with pepper and salt.
2. Top with sauce.
3. Garnish with basil or parsley.
