Ingredients
Panna Cotta Ingredients
1 14-oz can Full-fat coconut cream (canned)
1 cup Dairy-free milk
1⁄4 cup White sugar
1⁄3 cup Corn starch
2 tsp Vanilla extract
Mixed Berries Sauce
1-2 cups Frozen berries
1⁄4 cup Cane sugar or coconut sugar
Instructions
Panna Cotta Instructions
In a saucepan, warm the coconut milk and sugar on medium heat. Stir gently until the sugar is dissolved.
In a small bowl, mix the dairy-free milk and cornstarch. Blend with a hand blender or whisk really well so there are no lumps.
Slowly pour the cornstarch mixture into the warm coconut milk while stirring.
Cook on medium heat, stirring often, until the mixture gets thick and smooth—like a soft pudding. This takes about 10 minutes.
Turn off the heat and stir in the vanilla extract.
Pour the mixture into small serving bowls (about 1/3 cup each).
Place the bowls in the fridge for at least 3 hours, or overnight until set.
Berry Sauce Instructions
In a small saucepan, add the frozen blackberries and coconut sugar. Bring to a gentle boil over medium heat.
Once the berries are soft, use a spoon to mash them a little until you get the texture you like.
Let the sauce cool.
Spoon the berry sauce over the chilled panna cotta before serving. You can sprinkle with mint if you like!
