Ingredients
5g Smart Ground plant-based crumbles
8 grape tomatoes
1/3 cup diced onion
2 scallions
2 large leaves of romaine lettuce
1-2 tbsp olive oil
4 taco shells
Option to use grain-free avocado oil taco shells

Directions
1. Prep Ingredients;
Dice 8 tomatoes, 1/3 cup red onion, 2 leaves of romaine lettuce, and 2 scallions.
2. In a medium-sized pan, add 1 tbsp of olive oil and turn to medium heat.
3. Once olive oil is heated, add in 1/3 cup red onion. Cook onions in oil until onion is golden.
4. Once the onion is golden, add in 5g of Smart Ground plant-based crumbles and cook on medium heat for 5 minutes or until crumbles are fully cooked through.
Option to add in another splash of olive oil if needed.
5. Remove from heat and equally separate filling into 4 taco shells.
6. Top each taco with lettuce, tomatoes, and scallions.
Options to also top with vegan cheddar cheese and salsa.
Cheese tip: After topping the taco with cheese, microwave for 45 seconds to melt the cheese
7. Serve and enjoy!
