Ingredients
For the Curry
2 tablespoons olive oil or avocado oil
1 large yellow onion, diced
4 cloves garlic, minced
1½ tablespoons fresh ginger, peeled and grated
3 tablespoons curry powder
1½ teaspoons ground cumin
1½ teaspoons ground turmeric
¾ teaspoon smoked paprika or chili powder
¾ teaspoon salt, plus more to taste
Black pepper, to taste
1 can (14–15 oz) crushed tomatoes
2 cans (13–14 oz each) full-fat coconut milk
3 cans (15 oz each) chickpeas, drained and rinsed
5–6 oz baby spinach
Juice of 1 lime

Fresh cilantro, roughly chopped

Plain unsweetened coconut yogurt, optional

Instructions
1. Prep your ingredients. Dice the onion, mince the garlic, grate the fresh ginger, and drain and rinse the chickpeas. Roughly chop your cilantro and cut additional lime into wedges for serving.
2. Sauté the aromatics. Heat the olive or avocado oil in a large pot over medium heat. Add the diced onion and cook for 4–5 minutes, or until softened.
Add the garlic and fresh ginger and cook for another 30–60 seconds, stirring frequently, until fragrant.
3. Bloom the spices. Add the curry powder, cumin, turmeric, smoked paprika or chili powder, salt, and black pepper.
Stir continuously for 30–60 seconds. Briefly cooking the spices in the oil helps release their flavor and aroma and creates a more flavorful curry.
4. Build the sauce. Pour in the crushed tomatoes and coconut milk. Stir everything together until smooth and combined, then bring the sauce to a gentle simmer.
5. Add the chickpeas. Stir in the drained chickpeas. Reduce the heat and allow the curry to gently simmer for 10–15 minutes, stirring occasionally. The sauce will gradually thicken and the chickpeas will absorb all of those beautiful flavors.
6. Add the spinach. Add the baby spinach a handful at a time, stirring until wilted, about 1–2 minutes.
7. Finish with lime. Turn off the heat and squeeze in the juice of one lime.
Taste your curry and adjust as needed. Add a little more salt, lime, or spice until the flavors feel balanced.
8. Serve. Spoon the curry into bowls and finish with plenty of fresh cilantro.
For an extra beautiful presentation, add a drizzle of coconut yogurt, thinly sliced red chili, a fresh cilantro sprig, and a lime wedge.
