These plant-based breakfast burritos are one of those meals that prove a nourishing breakfast absolutely does not have to be boring.


They're hearty, savory, satisfying, and packed with a combination of plant-based protein, vegetables, and carbohydrates to help create a balanced meal. The tofu scramble gives you that classic breakfast-burrito feel, while crispy potatoes add texture and the spicy aioli ties everything together with a creamy kick.

Ingredients


For the burritos

  • 10 large flour tortillas or wraps

  • 2 blocks extra-firm tofu, drained

  • 5 medium potatoes, diced into small cubes

  • 8 cups fresh spinach

  • 2–3 tablespoons olive oil, divided

  • 2–3 tablespoons tamari

  • 1 tablespoon nutritional yeast

  • Salt, to taste

  • Freshly ground black pepper, to taste

  • 1–2 teaspoons garlic powder

  • 1–2 teaspoons paprika

  • 1 teaspoon turmeric


For the spicy aioli

  • 1 cup vegan aioli

  • 2–3 tablespoons sriracha, depending on your preferred spice level

  • Pinch of salt, optional


How to Make Them


1. Make the spicy aioli

Add the vegan aioli and sriracha to a small bowl. Stir until completely smooth and evenly combined.


Taste and add additional sriracha if you prefer more heat. Add a small pinch of salt if needed.


Set aside while you prepare the burrito filling.


2. Make the crispy potatoes

Preheat your air fryer to 400°F.


Wash the potatoes and cut them into small, evenly sized cubes. Keeping the pieces relatively uniform helps them cook at the same rate and gives you better crispy edges.

Transfer the potatoes to a large bowl and toss with olive oil, salt, black pepper, paprika, and garlic powder.


Working in batches if necessary, arrange the potatoes in the air-fryer basket without overcrowding them.


Air fry for 15–18 minutes, shaking the basket halfway through cooking, until the potatoes are tender inside and golden and crispy around the edges.


3. Prepare the tofu scramble

While the potatoes cook, heat a large skillet over medium heat with a small amount of olive oil.


Crumble the drained tofu directly into the pan using your hands or a spatula. You want irregular, bite-sized pieces rather than perfectly uniform crumbles.


Season with tamari, nutritional yeast, garlic powder, turmeric, salt, and black pepper. Cook for approximately 5–7 minutes, stirring occasionally, until the tofu is hot and lightly golden in places.


Add the spinach and continue cooking until it has just wilted into the scramble. Taste and adjust the seasoning as needed.


4. Assemble your burritos

For easier rolling, briefly warm your tortillas until they're soft and pliable.

Spread approximately 1–2 tablespoons of spicy aioli through the center of each tortilla, leaving room around the edges.


Layer on the tofu scramble, crispy potatoes, and additional fresh spinach if desired.

Be careful not to overfill—the burritos will be much easier to roll and toast.

Fold the two sides of the tortilla inward, bring the bottom edge up and over the filling, then roll tightly to close.


5. Get them golden & crispy

Heat a skillet over medium-low to medium heat with a very light coating of olive oil.

Place each burrito seam-side down in the skillet first. Cook until golden, then rotate and toast the other side.


This final step makes a huge difference: you get a warm interior surrounded by a lightly crisp, golden tortilla.


Serve immediately with extra spicy aioli for dipping.
